Obituary for Elizabeth (Beth) McCoy Symons "And on that day when my strength is failing, The end draws near and my time has come; Still my soul sings Your praise unending, Ten thousand years and then forevermore." It is with profound sadness yet comfort that we announce the death of Beth Symons. Beth was born August 29, 1961 and passed away peacefully April 5, 2024 at Lightways Hospice with family by her side. Beth was born and raised in Minooka and after graduation she had several jobs in the retail and food industry. She also had her own cleaning business for a time. After a visit to Portland Oregan, Beth and her sister Lou discussed opening a coffeehouse in downtown Minooka. It was just fate that Grandpa Ikes old appliance store was available. Many hours were spent renovating, but it soon became a great place for coffee, conversation and fun. Of course it was apply named Ike's Place and the name is on the building to this day. Beth enjoyed meeting and greeting people there. After Ike's Place closed she worked at Walgreens where she met many new friends and enjoyed helping people. Beth had a tremendous love of animals and felt she had a special connection with them. Her family often called her the "Dog Whisperer". Beth had spent the last 8 years living in Carterville, Il with her long time companion, Fred Appleton. While there she spent time gardening and enjoying the peaceful quiet countryside environment. She played an essential part in Fred's Rack and Pinion Business. When cancer became an issue,she came back north to be with her family and persue treatment.Living here allowed her time to reconnect not only with her family but also her long time friends. Beth was very proud of her son Kyle, a Bolingbrook Fireman and of course her two grandchilren Henry and Colton. Beth was able to attend her grandchildren's functions and observed their endless energy and love. She enjoyed attending church at Channahon United Methodist with her sisters and even helped with the Thrift Shop. It is felt that being here in the last six months gave her some more time and quality of life. Beth was preceded in death by her parents Don and Jean McCoy and her grandparents Emily and Edwin McCoy and Ike and Cora VanAsdlen. Beth will be fondly remembered by her son Kyle (Sarah) Symons; Grandchildren Henry and Colton Symons; long time companion Fred Appleton, his children Jason, Amber, Andrew and their families; sisters Jackie (Larry) Goggins, Lou McCoy, Donna (late Jim) Buckley. Special friends Shelly,Reni,Jan,Leslye,Sharon, Robyn; Nephews Pat (Shelly)Goggins and Dan (Amy Larson)Goggins. Neices Mary Smith and Emily (John)Sergeant. Great nephews Adam Smith, Aidan Goggins, Shaun Goggins and Jack and Matt Sergeant. Great neices Anna Goggins and Lauren Goggins. Beth was also blessed with many cousins and friends. Cremation was afforded per Beth's request. In honoring her wishes there will be no viewing or visitation. The family will have a celebration of life in her honor at a later date.
